I don't normally do this, but I made a kick ass cheesecake last month and I've just found the pictures. I thought I'd share it with you because it looks delicious and might inspire you to make your own! I'm afraid I can't share a recipe with measurements with you though, as I did it all by eye, which is probably why it gave me a massive sugar rush afterwards, but here goes...
Wash & chop 1 punnet strawberries.
Simmer them in a pan and add sugar.
Whilst your strawberries are simmering, crush 1 packet of digestives and mix with softened butter.
Create a base about however thick you like it, (I use 1.5cm) in a flan tin and refrigerate for 30 minutes.
Take off the heat and mash them into a pulp, don't worry about lumps!
Beat mascarpone cheese and double cream together, add strawberry pulp.
Add mixture to the flan tin and garnish with more strawberries and mint leaves.
Refrigerate overnight and serve!
